Cachapa, popular street food in Venezuela, is very much a representation of its people – warm and sweet.
When you drive to the Venezuelan province there are posts on the road where they make the cachapas on a huge plancha. They use maize flour and make the cheese by hand, right there, fresh and warm. It’s a kind of mozzarella cheese but tastes better! It’s very unique! They use a machete to flip the cachapas!
Here in Pasadena you can taste excellent cachapas at @amarachocolate and @chamovcuisine and in Miami my favorites are at @avilabistro
